In terms of books look up Douglas Adam, Ray Simpson, David Fitzgerald.
A bit cheeky to link to my own blog, but here's some stuff on a celtic rule of life http://paul-cracknell.blogspot.com/2005/08/catchup.html
What do you mean though by celtic spirituality? Do me mean specifically celtic, something more nature based in expression, or contemplative or mystical etc?
I came across this website http://www.faithandworship.com/index.htm and liked the daily prayers (scroll down). I like the meditative, calming, thought provoking words in this style of prayer.
